When I came back I had some delicious broth. 10 quarts to be exact! I bottled it up and then took the rest of the meat off the bones. I was able to pull another pound and a half from them. I had a recipe in mind to use the broth and some of the meat in.
I made a trip to one of our local Asian markets, not my favorite but it works in a pinch, to get coriander seeds, fish sauce and more coconut milk. I left the lemongrass out because I couldn't find it quickly and had already spent 15 minutes trying to explain to the very sweet stocker that I wanted coriander and could he help me find them? 2 stockers later and I left with the seeds!
The Zookeeper had kept asking me to try this soup that I had found on Pinterest. I wanted to make yellow curry sauce so that I could use it in another recipe also. I finally had all the ingredients and a free evening. It was a go for the soup then. The curry paste takes the most time just because there are so many ingredients in it. The rest is a breeze. I used the broth and meat from the turkey. I already had the rice noodles on hand and most of the ingredients for the sauce. I think I spent about $3 for the soup and fed 6 people until they were very full! The soup has such a nice creamy sauce that pairs so nicely with the rice noodles. I will be making it again!
